Cannellini tomato casserole with minced meat

I had friends over for drinks and some foodsing. I decided to make something easy yet supertasty so I came up with this spicy and soulfoody casserole that is simple to make and it holds up really well on the low heated stove for hours while your guests arrive.

Cannellini tomato casserole with minced meat

What you need (serves 6):

2 cans of cannellini beans
2 cans of crushed tomatoes
500 g minced meat
couple of tomatoes
some chorizo
chilli
garlic
fennel
2 tablespoons of vegetable stock fond (or 1.5 veggie stock cube)
olive oil
handful of fresh basil (or 2 tablespoons of dried basil)

What to do:

Prep the stuff. Drain beans. Cut up tomatoes. Chop garlic, chilli, fennel and basil. Half the sliced chorizo. You’re ready to cook.

Heat some olive oil in a large pot. Throw in the garlic and chilli. Fry for a minute. Add the chorizo and the minced meat. Fry for couple of minutes until almost cooked and little brown. Throw in the cut tomatoes and the fennel. Fry for couple of minutes. Pour in the crushed tomatoes. Add the vegetable stock fond. Season with salt and pepper. Bring the heat to medium. Stir. Let it cook for 15 minutes. Add the drained beans. Stir. Taste. Season more with salt and pepper if needed. Bring the heat to minimum. Stir in the basil and lid the pot. Voilà!
