As it is flu season again (many of my colleagues are feeling under 100%) I felt like eating something with asian twist. Checked my fridge and found some prawns left over in the freezer so I decided to go for them. So some veggies and curry paste and I ended up with a simple, quick and superdelish curry!
Simple tomato and prawn curry
(Serves 2 / Cooking time with prep approx. 15 min)
handful of prawns
can of crushed tomatoes
handful of cherry tomatoes
some turkish beans
1 bell pepper
1,5 tablespoons of indian curry paste
garlic
salt
pepper
olive oil

Prep the stuff. Chop the garlic and bell pepper. Half the turkish beans and cherry tomatoes. You are ready to cook.
Heat some olive oil on a wok pan. When oil is hot add the garlic and curry paste. Fry for a minute. Add the prawns, bell pepper, turkish beans and cherry tomatoes. Pour in the crushed tomatoes. Season with salt and pepper. Mix. Bring the heat to low-medium and lid the pan. Let it cook for about 7 minutes. You’re done! Plate the dish! Voilà!
You can stretch the curry to feed more people if you cook some rice for the side.
