I had totally different dinner plans for tonight, but when I filled my shopping basket with groceries and got to the cashier I was informed that the card payments don’t work and as I rarely have cash I had to ditch the shopping. So I got home and checked my fridge and found canned tuna, bell pepper and bacon and decided to try out something new. And boy was this a tasty idea. Nom nom.
Tuna, bacon and potato muffins
(Serves 2-3 / Cooking time with prep approx. 60 min)
1 can of tuna (preferably in water)
4 smallish potatoes
1 small red bell pepper
100 g bacon
2 eggs
garlic
leek
1/3 chilli
salt
pepper
olive oil

Prep the stuff. Peel and cut up the potatoes and put to boil. Chop the garlic, leek and deseeded chilli. Cut the bacon and bell pepper into small cubes. While the potatoes boil. Fry the bacon. When brown throw in the garlic and chilli. Fry for a minute and take off the stove.
Preheat the oven to 180º C.
When the potatoes are soft drain and mash them (I pressed them through a metal sieve). Now add everything else – fried bacon, garlic an chilli; cubed bell pepper; chopped leek; drained and broken up tuna. Mix everything. Add the eggs and season with salt and pepper. Mix thoroughly.
Put the mixture into an oiled muffin baking tray. Bake 20 minutes in 180º C. You’re done.
Plate the muffins and drizzle some olive oil over them. Voilà!

Wow… so I have to admit that what got me to read this post was the “odd” combo of ingredients to make a muffin. After reading how you put it all together it sounds quite good – and I will try this.
I just didn’t know how to call them other than savoury muffins 🙂
I totally recommend trying these out. Simply tasty. And the muffins can also be made out of leftover mashed potatoes.
