Keeping in with the theme of #gettinghealthy I tried out a salad with all the cabbages that I found from my fridge. Here’s the delish result.
Multi-cabbage and asparagus warm salad
(Serves 3-4 / Prep time approx. 5 min, cooking time approx. 10 min)
small broccoli
smallish romanesco
quarter of savoy cabbage
bunch of brussel sprouts
couple big or handful of small asparagus
olive oil
salt
pepper
pine nuts (optional)
shot glass of water
What to do:
Prep the stuff. Cut the asparagus into thick slices. Remove the outer leaves and the stalks of brussel sprouts and quarter them. Chop the savoy cabbage (NB! use just leaves not the middle stalk). Broke up the broccoli and romanesco into nice bite-sized pieces (again don’t use the stalks). You’re done. Lets cook!
Take a deep pan (I used a wok pan) and heat some olive oil in it. Throw in all the chopped and cut up veggies. Fry for couple of minutes. Pour in the water. Lid the pan. Let everything steam for couple of minutes. Unlid the pan and season with salt and pepper. Fry until water has vaporised. If you’d like and you can eat pine nuts throw a small handful of the nuts in the pan. Mix everything. Cooking is done! Plate the dish. Voilà!
