Didn’t feel like major cooking today. So I decided to make up something simple and easy and at the beginning hopefully tasty. As I haven’t eaten soup for a while I thought today is the day for souping! Note: it is really simple soup, but it’s not the quickest one 🙂  But I promise it’s superdelish!
Supersimple tomato, bean and beef soup
can of crushed tomatoes
can of beans (I used borlotti beans)
about 300 g of beef
one vegetable stock cube
big cup of water (250 ml)
chilli
couple leaves of sage
handful of basil
leek (about 5 cm)
garlic
salt
pepper
olive oil
What to do:
Drain the beans. Deseed the chilli. Chop the deseeded chilli, sage leaves, garlic and leek. If you bought single piece of beef then cut it into cubes no larger than 2 x 2 cm. Now you’re ready to cook. Take a pot, heat it up, drizzle some oil in it and throw in the beef cubes. Fry until they’re brownish. Add the chopped stuff and fry for a minute. throw in the beans, canned tomatoes, vegetable stock cube and the water. Stir. Cook on high heat for about 10 minutes without the lid. Add most of the basil, salt and pepper to taste. Put the stove on lower side of medium. Lid the pot. Let it cook for about an hour until the meat is tender. When meat is ready add the rest of the basil. Stir. Plate the soup. Drop couple of leaves of basil on top for appearances and drizzle some olive oil. VoilĂ !
