Spicy chicken, zucchini and tomato stew with sugar peas

As I’m still a little coldish I thought it would be great to eat something a tad spicy and full of vegetables. So I gathered stuff that I found from the fridge and made up this comforting stew.

Spicy chicken, zucchini and tomato stew with sugar peas

What you need:

500g chicken breast
couple tomatoes
zucchini
handful of sugar peas
leek
peperoncino or chilli
garlic
salt
pepper
handful of basil
pizza seasoning mix (I used Santa Maria’s)
olive oil
balsamic vinegar

What to do:

Prep the stuff. Cut the chicken breast, slice the tomatoes and zucchini. Brake some of the sugar peas. Chop the peperoncino, garlic and leek. Gather some basil.

Heat the stove. Take a big pan (I use wok pan) and drizzle some olive oil. When hot, throw in the peperoncino and the cut chicken. Fry couple of minutes. Add garlic and the leek. Fry a little. Add the sliced zucchini and tomatoes. Season with salt, pepper and the pizza seasoning. Mix everything up. Fry couple of minutes. Add the sugar peas and basil. Mix. Bring the heat to low medium. Lid the pan and leave it to cook for 15 minutes.

Remove the lid. Taste. If needed season with salt and pepper. Plate the dish. Drizzle some olive oil and balsamic vinegar on top. Voilà!
