Warm chicken mushroom salad

Last weekend I went to Positivus music festival, that I enjoyed enormously, but I ended up with a little summerflu/cold. So I decided to cure it the old-school way – with chicken soup and lots of herbal teas and stuff. It worked, I’m feeling a lot better now. But making the chicken broth I was left with lots of different leftover ingredients. So, today I decided I was fed-up with soup and made a superdelish warm salad with the leftovers. And here comes the supersimple recipe.

Warm chicken mushroom salad
(Serves 2 / Cooking time with prep approx. 15 min)

What you need:
warm chicken mushroom salad (pellissimo.ee) makings

handful of mushrooms
handful of cooked chicken meat (i had chicken breast)
half of a bell pepper
couple celery stalks
couple small tomatoes
garlic
chilli
butter
olive oil
salt
pepper

Prep the stuff. Chop everything into any size you’d like.

Heat dash of oil and a knob of butter on a wok pan. When butter has melted throw in the garlic and chilli. Fry for a minute or two. Now add mushrooms. Fry for a minute. Now add other veggies. Frye and stir for couple of minutes. Season with salt and pepper. Throw in the chicken. Fry until chicken is hot and you are done.  Plate the dish and drizzle a little olive oil on top. Voilà!
