Today is the International Women’s Day, hence I decided to bake a cake for the ladies at the office. I went with the dark chocolate cherry cake as its super easy to make and extremely delish! This is not my recipe, but found on a finnish cooking site that I can’t remember nor find anymore (when I find the link I will give credit).
Chocolate cherry cake
(Cooking time with prep approx. 50 min)
200 g dark (70%) chocolate
200 g butter
200 g sugar
4 eggs
2 cups of cherries (conserved or fresh, both will work)

Prep the stuff. Break the chocolate into small pieces. Cut the butter into cubes. Cut up the cherries. Separate the egg whites from the yolks. Preheat the oven to 180º C.
Lay the cherries onto a bottom of a cake pan (23/24 cm). Put the chocolate and the butter and 2/3 of the sugar into a glass bowl and put that on a boiling water pot – leave the stove on and water boiling until the heat will melt the mixture in the bowl.
Meanwhile froth separately the egg whites and yolks, before whipping share the remaining 1/3 of sugar between them. When chocolate, sugar and butter mix has melted mix everything together – add the whipped yolks and the chocolate to the egg whites.
Pour the mixture onto the cherries in the cake pan. You’re ready bake. Put the cake to oven and bake for 30 minutes. Voilà!
