Spicy egg salad

I went out partying yesterday (danced to Hype Williams’ and Bakey Ustl’s beats) and that resulted in getting a tad tipsy. 🙂 Morning wasn’t the shiniest of them all but nothing major. Anyhow, I’ve heard and tried that good cure is spicy food and/or eggs. So I got to the fridge and whipped something up with the stuff I found – came out superdelish and on top of that i feel gooder 😉

Spicy egg salad a la le fridge de Pello

What you need:
egg slad makings

romaine lettuce
leek
chilli
tomato
eggs
extra virgin olive oil
balsamic vinegar
salt
pepper

What to do:

Boil the eggs. I like them hardboiled, though if you prefer soft and runny I’m quite sure they’d work in this mix too. While the eggs are boiling chop the veggies. Toss the chopped stuff to a bowl and add the oil and some salt+pepper to taste and mix. Plate the salad and drizzle some balsamic vinegar on it. Peel the boiled eggs, slice and add to the salt. Season more with some salt and pepper. Voilà!
