Leftover cooking vol 3. Last findings from the fridge make one tasty dinner 🙂
Warm spicy chorizo and tomato salad
can of crushed tomatoes
150 g thinly sliced chorizo
couple slices of smoked bacon
handful of romaine salad
What to do:
Prep the stuff. Cut the bacon into small strips. Half the sliced chorizo. Deseed and chop the chilli. Chop garlic, leek and parsley. Cut the romaine salad.
Heat a pan. Add bacon. Fry until crispy. Add some oil. Throw in the chorizo, garlic, chilli and leek. Fry until chorizo has reduced about half the size. Pour in the canned tomatoes. Season with salt and pepper. Stir. Let everything simmer for a while (about 7 min). Keep stirring. Add parsley and the cut romaine salad. Stir. You’re done! Plate the salad. Garnish with parsley. Voilà!
