I’m trying out new combinations for easy and quick dinners. Today I found a couple of things in my fridge that I thought should go together and they did!
Supersimple fennel, bell pepper and tuna pasta
(Serves 2-3 / Cooking time with prep approx. 20 min)
small handful of wholegrain spaghetti
1 can of tuna in water
1/2 normal sized fennel
1 bell pepper
garlic
chilli
salt
lime pepper (can be substituted with regular pepper and dash of lime juice)
olive oil
What to do:
Put pasta water to boil and prep the stuff. Chop the garlic, deseeded chilli, bell pepper and fennel into small pieces.
Put the pasta to boil. Heat some olive oil in a pan. When oil is hot add chilli and garlic. Fry for a minute or so. Add the chopped bell pepper and fennel. Bring the heat to high-medium. Fry for 5 minutes. Now add the tuna (don’t drain). Season with lime pepper and salt. Stir and heat until your pasta is cooked. Drain the pasta and mix in with everything on the pan. Plate the dish. Voilà!
