The other day I craved for something creamy so I whipped up a supersimple meal with lots of cream 🙂
Creamy chicken and vegetables
(Serves 2 / Cooking time with prep approx. 20 min)
2 chicken breasts
handful of spinach
handful of sugar peas
handful of turkish beans
2 small or 1 medium broccoli
1 bell pepper
1 cup (200 ml) double cream

Prep the stuff. Deseed the chilli. Chop the deseeded chilli and garlic. Cut up the bell pepper (to size and shape of your wishing). Half the sugar peas and turkish beans. Cut the chicken breasts into cubes. You’re ready to cook!
Take a wok pan and heat some olive oil. When oil is hot throw in the garlic and chilli. Fry for a minute. Now add the chicken breast cubes. Fry for couple of minutes. Now add the sugar peas, turkish beans, bell peppers and spinach leaves. Pour in the cream. Season with salt and pepper. Mix. Lower the heat to low-medium. Lid the pan. Let it cook for 4 minutes. Take off the lid. Taste. If needed season more with salt and pepper. Let it simmer for another 4 minutes without the lid to reduce the liquid a bit. You’re done! Plate the dish. Voilà!
